Black Bean Enchiladas
Ingredients
1 Cup cooked quinoa
1 ½ Cup cooked black beans
3 Stalk scallions Chopped
½ Cup chopped red onion
1 Cup red pepper
¼ cup chopped cilantro
1 Teaspoon cumin
2 Teaspoon olive oil
2 Cups tomato sauce
7 Large spelt flour tortillas (We used homemade)
Sea salt and cayenne pepper to taste
Method
  1. Add oil to pot that is slightly heated; then add red pepper, scallion, onion, salt, pepper and cumin, and sauté for two minutes.
  2. Add quinoa, black beans and cilantro and combine.
  3. Pour a small amount of the sauce in your baking container just enough to cover the bottom.
  4. Add five tablespoon of bean mixture in the center of the tortilla and roll up, and place seam down in a baking container. Repeat the process until your mixture is finished.
  5. Pour the remaining sauce over the enchiladas, put it in a preheated oven (350 degrees) and bake for 25 minutes.
