Curried Cabbage
¾ Cabbage, sliced in six pieces
½ Cup chopped scallion
½ Cup Onion (sliced)
1 ½ Plum tomato (sliced)
1 Tablespoon olive oil
1 Teaspoon thyme
½ Teaspoon turmeric
¼ Teaspoon cumin
¼ Teaspoon cayenne
Sea salt
½ Cup water
1. Combine scallion, onion, tomato, thyme and cayenne pepper in a pot at medium heat and add olive oil.
2. Stir until unions becomes tender (about 5 minutes)
3. Add turmeric, cumin, salt and stir.
4. Add cabbage, pour in water, cook on each side for about 8 minutes and serve
