Curried Coconut Veggie Wraps
Ingredients

Wrap
2 Cups spelt flour
1 ¼ Cup coconut milk
1 Teaspoon agave or natural sweetener
Pinch of sea salt
Olive oil for firing

Filling
1 Avocado sliced
1 Cup of lettuce chopped
½ Cup kale chopped
¼ Onion sliced
1 Plum tomato diced
½ Jalapeño pepper
¼ Cucumber diced

Method
  1. In a mixing bowl, mix spelt flour, coconut milk, agave syrup and salt.
  2. Lightly grease a non stick frying pot. Heat the pan until hot. Pour enough of your mixture to cover your pan bottom. Cook until golden brown (about 2 minutes), flip and cook the other side.
  3. Apply veggies to each wrap and fold into halves. Enjoy.
