Seasoned Barley With Baby Spinach
Ingredients
2 ½ Cup cooked barley
2 Cups baby spinach
1 Cup cooked green peas
1 Sprig of thyme
1 Sprig of scallion
¼ Onion (diced)
1 Plum tomato (diced)
¼ Cup fresh parsley
1 Tablespoon olive oil
Sea salt
Method
1. Add thyme, scallion, onion and tomato and stir fry on low heat for about 2 minutes.
2. Add the other ingredients and continue stir frying for about 5 more minutes.
