Chickpeas With Okra
2 cups chickpeas cooked (not too soft)
1 cup sliced okra
1 cup chopped string beans
2 tablespoons olive oil
1 teaspoon cilantro
1 teaspoon cumin
1 teaspoon parsley
1 teaspoon sesame seed
1 red pepper chopped
1 green pepper chopped
1 red onion chopped
2 plum tomatoes chopped
2 tablespoons scallion finely chopped
Pinch of rosemary
½ teaspoon cayenne pepper
Sea salt to taste
1 Heat oil and sauté vegetables.
2 Add chickpeas to sauté vegetables and stir.
3 Add herbs and spices and allow to simmer for 30 minutes.
