Baby Spinach Filled Dumplings
2 cups spelt flour
¼ teaspoon sea salt
½ cup water for kneading

2 cups baby spinach
4 tablespoons olive oil
1 small red onion chopped
¼ cup red pepper chopped
1 teaspoon cilantro
1 teaspoon dill
1 teaspoon parsley
½ teaspoon sea salt
Pinch of cayenne pepper

1 Heat oil and add all your vegetables and stir to combine.
2 Add herbs and salt and stir, cover pot and leave to steam for about 10-15 minutes.
1 In a bowl add flour and salt and combine.
2 Make a well in the center and pour water in small portion, use hand to knead into stiff dough.
3 Use a rolling pin to roll dough to about ¼ inch thin, use a saucer (about 7 ½ inches wide) to cut a circle.
4 Spoon in the baby spinach in the center of your circle and fold to make a half moon shape and seal edge, place in a pot of boiling water on high heat, cook for about 15 minutes
