Apple Crumb Cake
For the apple filling:
3 medium peeled apples (grated)
1 tablespoon agave syrup
½ teaspoon of ground ginger
4 tablespoon agave syrup
1 teaspoon ground cinnamon
½ teaspoon ground ginger
¼ teaspoon salt
4 tablespoon olive oil
1 cups spelt flour
For the cake:
2 teaspoons vanilla extract
1 cup spelt flour
¼ cup agave syrup
½ teaspoon baking soda
½ teaspoon baking powder
¼ teaspoon salt
½ cup olive oil
1 cup almond milk
Preheat oven to 325 degrees.
For filling
Combine grated apples with agave and ginger and Set aside.
In a large bowl, combine spices, agave and salt into oil. Then, add flour and combine, It will look and feel like a solid dough. Leave it pressed together in the bottom of the bowl and set aside in the freezer for about 10 minutes.
1 In a large bowl, , mix together flour, baking soda, baking powder and salt.
2 Add oil, milk agave and vanilla mix until flour is moistened and smooth.
3 Scoop out about half cup batter and set aside.
4 Scrape remaining batter into prepared pan.
5 Spoon apple mixture over batter.
6 Pour set-aside batter over apples.
7 Using your fingers, break topping mixture into crumbs.
8 Sprinkle over cake. Bake cake until a toothpick inserted into center comes out clean 45 to 55 minutes. Cool completely before serving.
