Black beans and Avocados

Black beans and Avocados
Two Hass Avocados (or any other type)
2 Cups black beans (cooked)
1 Stalk scallion
1 Tablespoon sweet pepper
¼ Teaspoon cayenne pepper
Pinch of salt
¼ Onion sliced
¼ Cup plum tomato diced
1 Tablespoon olive oil
  1. Sauté seasonings in oil for 5 minutes at medium heat.
  2. Add black beans and salt, cook for 10 minutes.
  3. Cup avocados in halves, remove seed and skin.
  4. Pour black bean mixture into the mold of the avocados and serve.
