Blueberry Jelly Cake
2 cups blueberry
½ cup agave
½ teaspoon lime Juice
A pinch of salt
2 cups almond milk
¼ cup agave syrup
½ cup olive oil
¾ teaspoon vanilla
2 ½ cups spelt flour
1 teaspoon baking powder
¾ teaspoon baking soda
½ teaspoon sea salt
1 Put all your ingredients in a pot and stir to combine and stir as necessary.
2 Cook on medium heat; allow blueberries to break down until a thick paste is formed.
3 Remove from heat and allow jelly to cool for about 10 minutes.
1 Preheat oven at 350 degrees and lightly grease cake pan.
2 In a bowl add all your dry ingredients and combine.
3 Add your wet ingredients to your dry ingredients and use a wooden spoon to combine wet and dry ingredients, and try not to over mix.
4 Divide mixture evenly in two portions. Pour one portion of your mixture in your prepared pan for the bottom layer.
5 Use a spatula to spread jelly on the top of your bottom layer gently.
6 Put the remaining mixture on the top of filling and bake for 40-45 minutes
