Boniato Potatoes Pudding
2 Pounds sweet potato
1 Cup spelt flour
2 Cups coconut milk
½ Cup raisins
2 Teaspoons vanilla
1 Teaspoon mixed spice
½ Teaspoon cinnamon powder
1 Cup coconut sugar
1 Teaspoon sea salt
1 Teaspoon olive oil
1 Wash and pare off the skin of the potatoes
2 Wash again then grate
3 Grate coconut, add 2 cups water and squeeze juice through a strainer
4 Mix flour, mixed spice raisins, cinnamon powder, and sea salt.
5 Combine flour mixture with the grated potatoes and mix well
6 Add sugar and vanilla to coconut milk, mix until sugar is dissolved
7 Combine wet and dry ingredients and mix well
8 Grease pan with olive oil, pour in batter, bake at 350 degrees for 40-60 minutes or until done.
