Callaloo Soup

Callaloo Soup
2 Plum Tomatoes (diced)
3 Cup Water
2 Cup Callaloo (chopped in small pieces)
½ Cup Onion( chopped)
1 Sprig of thyme
8 Allspice seeds
1 Tablespoon olive oil
1 Teaspoon onion powder
Salt and pepper to taste
1. In a sauce pan add olive oil and sauté onion, tomato, and thyme for about 5 minutes.
2. Add callaloo and allspice with three cups of water
3. Add onion powder, salt and pepper to taste
4. Continue to cook for 20 minutes on medium heat
