Chocolate Coconut Pie

½ Cup almonds
1 Cup spelt flour
½ Tablespoon olive oil
½ Cup water
Pinch of salt

½ Coconut
3 Cups water
1 Cup spelt flour
¾ Cup coconut palm sugar (or any natural sweeter)
1 ½ Tablespoon cocoa powder
Dash of salt
1 Teaspoon vanilla

Preheat oven at 350°

  1. In a blender, blend almonds until powdery.
  2. Combine all crust ingredients together and use hands to knead into dough.
  3. Use rolling pin to roll dough into a circle (about ¼ inch thick), about the same width as the pie baking pan.
  4. Use hands to mold dough into greased baking pan.

  1. Combine coconut and water together and blend into fine flakes
  2. Combine all ingredients together and mix well.
  3. Pour filling into prepared crust (pan) and bake for 45 minutes.
