Curried Green Bananas
6 green bananas
4 tablespoons olive oil
½ cup green peas
½ cup strig beans chopped
½ green pepper chopped
½ red pepper chopped
1 red onion chopped
2 plum tomatoes chopped
6 grains pimento
2 cups coconut milk
1 sprig of thyme
2 tablespoons scallion finely chopped
1 teaspoon turmeric
1 teaspoon cilantro
½ teaspoon cumin
1 teaspoon parsley
Sea salt to taste
Pinch of cayenne pepper
1 Heat olive oil and add turmeric and cumin.
2 Add vegetables and herbs to heated oil and sauté.
3 Add green bananas and cook for 5-10 minutes until lightly brown on medium heat.
4 Pour in coconut milk and continue cooking until custard thicken (for about 35-40 minutes).
