Fried Amaranth Dumplings with Callaloo

These fried dumplings are nothing to play with, you should try them. Caribbean flavor all the way today. Normally, they make them with cornmeal, which we do not recommend eating. Amaranth is a great substitute for cornmeal in some instances, not all. These dumplings with callaloo and avocado are simply delicious.


1 ¼ spelt flour
¼ Cup amaranth (powderized/blend into powder)
1 Teaspoon baking powder
Pinch of sea salt
1 ½ teaspoon agave
1 Cup water
Oil for frying

  1. In a bowl, add all dry ingredients and mix together
  2. Add water and agave and stir with spoon and until batter comes together
  3. Add more flour until batter thickens, forming dough
  4. Knead dough for about 2 minutes
  5. Cover dough and let sit aside for about 10 minutes
  6. Heat oil in frying pan, enough to cover half of each dumpling
  7. Fry dumplings until golden brown (turn periodically)


6 cups chopped callaloo
1 sprig of thyme
1 small red onion slice
1 ½ tablespoon extra-virgin coconut oil 
1 small tomato chopped
Sea salt and cayenne pepper to taste

  1. Pour oil in a saucepan and add onion, thyme, tomato and sauté for 2-3 minutes on medium heat.
  2. Add callaloo, salt, pepper and combine with the sauté mixture. Reduce heat and continue cooking for 5-7 minutes while stirring as needed.
