Lentils Burrito

Lentils Burrito
½ Cup onion
2 Teaspoons olive oil
1 ½ Cup cooked lentil
1 Tablespoon scallion
1 Cup chopped watercress
½ Cup cooked black rice
1 Plum tomato diced
7 Medium size flour tortillas (We used homemade)
Sea salt and cayenne pepper
Avocado sauce
1 ½ Peeled avocado
1 Small jalapeno pepper chopped
1/3 Cup fresh cilantro
1 Teaspoon lime juice
2 Tablespoons finely chopped onion
2 Tablespoon olive oil
½ Cup water
Sea salt to taste
  1. Combine onion, tomato, scallions in a heated pot – pour olive oil and sauté for about two minutes or until onions become translucent.
  2. Add rice, lentils, salt and pepper and combine.
  3. Add the watercress to the mixture and combine cover pot and reduce heat and remove from heat in 4 minutes.
  4. Put two tablespoons of lintels mixture onto flour tortillas and make into a wrap, repeat this process until it’s complete.
Sauce Method
  1. Combine all your ingredients in a blender and blend until smooth.
  2. Pour avocado sauce over burrito and enjoy.
