Mushroom Sandwish
1 large portabella mushroom
2 plum tomatoes sliced
4 romaine lettuce leaves broken in medium pieces
¼ cup sliced red onion
½ cup spelt flour
¼ teaspoon cayenne pepper
1 teaspoon sea salt
2 spelt buns (I used homemade)
1 cup water
½ cup olive oil for frying
1 slice mushroom in trunks put in 1 cup water with ½ teaspoon of salt to soak for about 5 minutes try not to over soak
2 in a bowl combine flour, cayenne pepper and remaining ½ teaspoon salt.
3 pour oil in a deep pot and hot at medium heat
4 dip soaked mushrooms in flour mixture, ensure that your mushrooms are well floured
5 put mushrooms in hot oil and fry until golden brown for about 5-10 minutes
1 cut buns open and on one half add lettuce, tomatoes, mushrooms and onions, put next half on top of your filling.
repeat the process with your remaining ingredients
