Quinoa Legumes Salad

½ Cup cooked chickpeas
½ Cup cooked Black beans
2 Cups cooked quinoa
½ Cup finely chopped red pepper
1 Cucumber sliced
2 Cups kale chopped (remove spine)
¼ Cup purple onion sliced
2 Tablespoons olive oil
¼ Teaspoon cayenne pepper
1 Teaspoon lime juice
Pinch of sea salt

  1. Combine all dry ingredients together and mix
  2. Add oil and mix some more, and serve
