Roasted Vegetables
1 ½ Zucchini diced into medium pieces
4 Mushrooms sliced
7 Brussel sprouts cut in halves
1 Plum tomato diced
¼ Cup chopped cilantro
½ Bell pepper sliced
1 Stalk scallion
¾ Onion sliced
1½ Tablespoons jerk seasoning
Dash of salt
1 Tablespoon oil (any natural oil)
  1. Combine everything together and mix (stir) well with a spoon.
  2. Preheat oven at 350 degrees.
  3. Pour mixture into a baking glass, cover and let it sit for about 15 minutes.
  4. Remove cover and bake for about 30 minutes or until skin of vegetables start turning brown.

Side notes: This recipe is great with quinoaand with tomato sauce poured over the vegetables when serving.
