Sautéed Tomato and Avocado

Quick Sautéed Tomato and Avocado

1 ½ Cup grape tomatoes (sliced in halves)
1 Avocado (I used Hass avocado) diced
¼ Onion finely sliced
¼ Yellow bell pepper sliced into thin strips
1 Stalk spring onion (scallion)
1 Tablespoon coconut oil

  1. Combine oil, tomatoes, bell pepper, onion, scallion and salt in a pot and sauté on low heat for about 5 minutes.
  2. Remove mixture from heat, let cool a little, then pour over avocado and serve.
