Stewed Chickpeas

Stewed Chickpeas
2 Cups cooked chickpeas
1 Tablespoon jerk seasoning
½ Plum tomato diced
½ Purple onion sliced
2 Teaspoon red pepper flakes
¼ Teaspoon turmeric
1 sprig thyme
1 ½ Cup coconut milk
Dash of sea salt

Ingredients to add in the end
1/3 Bell pepper diced
¼ Onion sliced
½ Jalapeno pepper
  1. In a pot, pour in coconut milk, let simmer for 2 minutes.
  2. Add jerk seasoning, tomato, onion, thyme, red pepper flakes and sea salt – let simmer for 2 minutes more.
  3. Add chickpeas and cook for 25 minutes.
  4. Add the remaining ingredients, bell pepper, Jalapeno pepper and onion and cook for another 10 minutes.

Please note: Small dumplings were added to this recipe, which can be seen in the photo, but it is optional.
