Vegan Lo Mein

Vegan Lo Mein
1 10 oz. cooked spelt or kamut spaghetti
½ Cup sliced portabella mushrooms
¾ Chopped red onion
½ Cup sliced bell pepper (red, yellow, green, etc.)
1 Teaspoon of ginger finely chopped
1 Stalk scallion chopped
1 Tablespoon olive oil
2 Teaspoon sesame oil
1 Teaspoon agave
2 Handful of baby spinach
Pinch of salt
  1. In a large pan, sauté onions bell pepper, ginger, scallion, salt and mushroom in olive oil for 5 minutes.
  2. Add spaghetti, agave and baby spinach and cook for another 5 minutes.
  3. Stir in sesame oil and serve
