Watercress Soup
2 Cups watercress
6 cups warm water
¼ Onion sliced
1 Stalk scallion
1 sprig thyme
2 Tablespoon chopped sweet pepper
¼ Teaspoon cayenne pepper
½ Teaspoon onion powder
1 Plum tomato diced
½ Tablespoon olive oil
½ Teaspoon turmeric
½ Chayote (cut in thin slices)
Pinch of salt
  1. In your soup pot, add oil, then add all the seasonings and sauté for 5 minutes (add little warm water if necessary to retain moisture).
  2. Add the rest of warm water and cook for 5 more minutes.
  3. Add Chayote, and cook for an additional 10 minutes or until food is soft.
  4. Add watercress and cook for 5 minutes, let cool a little and serve.
